My Recipe for Yummy Cold Veggie Pasta

Cold Veggie Pasta
Your Need:
1 box of pasta...(I like whole wheat but pick your favorite kind)
1 Cucumber
1/2 Cup Green Olives
1 Can Black Olives
1 Bell Pepper (Red Green or Yellow or a little of all three for color)
3 Tomato's
1 can Artichokes (Drained)
1 Lemon
4 Tb spoons Balsamic Vinegar
4 Tb spoons Olive Oil
2 Ts spoons Dried Basil
6 Leaves Fresh Basil
1/2 Cup Shredded Parmesan Cheese ( You can add other cheeses if you like too)
Salt & Pepper to taste
A little of the Juice from the Green Olives :-) That's to taste too.
If you like garlic you can toss a few cloves in too.....
Cook your pasta till done, drain the hot water off, the run cold water over your pasta to cool it down...Be sure to drizzle with a Tb spoon of olive oil and toss so it won't sick as it cools...You can then pop it in the frig to chill while your chopping your veggies.

In a large
Combine your Olive Oil, Balsamic Vinegar, cut and squeeze the juice of 1 Lemon in the bowl... add, salt, pepper and dried Basil...Stir and let that sit while you chop...
Course chop all your veggies.... Tomatos first so the juices of the tomato get in there....then just add the rest and toss toss toss!!! Let it set in the refrigerator tell your ready to eat...So all the flavors blend.....
